Vegan cookie dough balls

INGREDIENTS:

1 can (15 ounces) chickpeas, drained and rinsed

1/3 cup salt-free peanut butter or almond butter

1/4 cup maple syrup

1 tsp. vanilla extract

3/4 tsp. cinnamon

pinch of salt

1/4 cup dairy-free mini choc. chips

RECIPE

Preheat oven to 400 degrees.Spread the chickpeas out on a baking sheet and roast for 15 min.,stirring once halfway through cooking time. Let them cool for several minutes.

Place the chick peas, PB ,maple syrup, vanilla ,cinnamon,and salt in a food processor and blend til creamy and starts to clump together.Pulse in the choc.chips.

Using slightly damp hands, roll the mixture into 1 inch balls. 14 balls should be made approx. Keep them chilled.
