INGREDIENTS:
1 cup cottage cheese
2 tablespoons prepared pesto
6 rye crispbreads
1/2 cup thinly sliced cucumber
1 cup cherry tomatoes, halves
In a bowl, stir together the cottage cheese and pesto.
To assemble, spread the cottage cheese mixture onto the crackers and top with the cucumber slices and cherry tomatoes. Season with a sprinkle of coarse salt and freshly crackled black pepper.
