INGREDIENTS:
-1-1/2 cups dried figs, stems sliced off
-1 cup almond flour
-1/3 cup cocoa powder
-2TBS honey or maple syrup
2 tsp.orange zest(optional)
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp salt
1/2 cup chopped walnuts
PLAN:
Place the figs in a large bowl, cover with hot water, and let them soak for 30 min.Drain the figs and pat away extra moisture with a paper towel. Place the figs,almond flour, cocoa powder and honey(syrup),zest, vanilla,salt and cinnamon in a food processor and blend til mixture clumps together.
Pulse in the walnuts.
Line an 8x8inch square baking pan with parchment paper, leaving about 1 inch overhanging.
Add the fig mixture to the pan and use damp hands to press the mixture flat,about 3/4 inch thick.
Place the pan in the freezer until the contents have firmed up.,about 1 hour.Slice into 9 squares.Keep them in freezer or refrigerator.
